[docs] fix link to AI and LLM Usage in docs/README.md (#4618)

docs/policies/AI.md was removed in a2aa4d97e1.

I linked it to the policies section in CONTRIBUTING.md, since AI and LLM usage is important to have. We can just remove it though.
